Cowboy Caviar


• 1 (15 ounce) can black beans
• 1 (15 ounce) can chickpeas
• 1 (15 ounce) can corn
• 1 green pepper
• 1 red onion
• 1 lb Roma tomato
• 1 bunch cilantro (amount to your liking)
• 1 lime
• 1 tsp salt
• 1 tsp garlic powder
• ½ cup olive oil
• 1/3 cup red wine vinegar


1. Drain cans of black beans, chickpeas and corn then add to large mixing bowl.
2. Wash green pepper, red onion, Roma tomatoes, cilantro and lime.
3. Dice green pepper, red onion and Roma tomatoes then add to large mixing bowl.
4. Finely chop cilantro then add to large mixing bowl.
5. Halve the lime then squeeze juice of both halves into large mixing bowl.
6. Add salt, garlic powder, olive oil and red wine vinegar to large mixing bowl. Use
spatula or large spoon to mix all ingredients thoroughly. Keep mixture refrigerated. Enjoy!
